When the couple is wedded, it’s time to dig into the food. The first meal a husband and wife share is a celebrated moment of their story, which is why True Flavors Catering creates dishes that reflect the couple’s personality with restaurant-quality flavors.
“The taste of our food sets us apart from the competition,” says Mark Hernandez, True Flavors’ Chief Operating Officer. “We create menus that fit our client’s tastes and budgets with flavors that are as good as they get.”
Founded by renowned local Chef Johnny Hernandez, the brains behind top San Antonio eateries like La Gloria and Burgerteca, True Flavors is a preferred vendor at the city’s top wedding venues and the exclusive catering partner of the Tejas Rodeo. Under Chef Hernandez’s expert guidance, True Flavors serves up wedding meals that make guests feel like they’re dining at one of Hernandez’s famous restaurants.


“Everything that comes out of the True Flavors kitchen has the same ingredients, techniques and quality as our restaurants,” says Mark. “It’s uncommon for a catering company to have a great chef like Johnny on staff. Lucky for us, he’s been here since the beginning.”
Family History
While Chef Hernandez is the culinary talent behind True Flavors, his siblings Mark and Leticia have kept the kitchen running smoothly since the beginning.
“We started True Flavors 24 years ago, when I was still in college,” says Mark. “And we’ve always strived to make sure the service is as good as the food. Almost all of our business comes from word of mouth.”
The children of restaurant owners, all three Hernandez siblings grew up with a love of food and its ability to bring people together. Their parent’s restaurant still operates today, as the company’s commissary.
Along with delectable dishes, True Flavors provides its clients with linens, china, floral arrangements, bartending services and more.
“We can do as much or as little as our clients need,” says Mark. “We’re here to make their wedding as easy for them as possible.”

Personalized Plates
When it comes to menu planning, the process is personal; according to Mark, no two menus at True Flavors ever turn out exactly alike. Millennial couples, fans of cooking shows and foodie social media channels, come to True Flavors to get creative.
“Today, there’s so many unique ideas about food,” says Mark. “When we talk to our couples, we pull inspiration from them and help them create a menu that’s all their own.”
The process begins with a sit-down consultation, where couples discuss their budgets, dietary restrictions and their favorite foods and restaurants. Research and practice is key to the chefs at True Flavors, who only serve a meal they know looks and tastes great.
“In the past, our chefs have done everything from sushi stations, where they’re rolling the sushi on site, to ethnic dishes from the couple’s background,” says Mark.
Mark also helps couples make the necessary menu adjustments to meet their budget, often through simple tricks like switching a protein that cuts cost without compromising flavors.
“I always tell our couples to let us worry about the food,” says Mark. “When they thank me at the end, I know we did a good job, and that they have something they’ll always remember.”
